The innovative 100-day restaurant that Alain Ducasse, Albert Adrià and Romain Meder devised for Paris, opened on November 10, 2021 at Les Ombres, on the roof of the Quai Branly – Jacques Chirac Museum.
This experimental project, conceived as a proposal for haute cuisine, has its roots in Spanish and French culture, without forgetting the constant search for innovation and the culinary avant-garde. This initiative, with its unique design and ambitious staging, has prompted reflection on a new way of practicing haute cuisine, according to a conscious and sustainable logic.
After the long period of closure experienced by large restaurants throughout Europe, ADMO* gave free rein to energy and creativity. It was born from Alain Ducasse’s dual desire to celebrate the return of a vibrant gastronomy in the heart of Paris and to show that he still invites you to dream. It reflects Alain Ducasse’s constant desire to cross borders and open himself up to new and enriching influences.
For Albert Adrià, Paris is a return to his roots, a way of “closing the circle”, as he thought when he received the invitation from Alain Ducasse. France has always been a primary source of inspiration for the Catalan chef. He has not forgotten the happiness of his childhood tasting his aunt’s dishes in Toulouse, nor his study visits and research to understand French techniques. To this day, he can easily recall the classic recipes he used to learn the trade.
The location chosen for the project is no accident. The roof of the Quai Branly – Jacques Chirac Museum offers a unique view of Paris, in the image of the building designed by the architect Jean Nouvel. This exceptional location will also allow you to engage with the different eras and continents represented in the museum.
