A tribute and commitment to Mexican culture. It is the result of chef Paco Méndez’s personal vision and his way of understanding Mexican gastronomy.
The origins of Mexican cuisine are pre-Hispanic, full of ancestral techniques that have influenced many gastronomic cultures and vice versa. The aim of Hoja Santa was to allow its clients to live and feel the experience of being and eating as if they were in Mexico.
